Vanilla Bean Lemon Squares

 

That perfect summery treat with a twist of vanilla! Beautiful rich taste with that pop of citrus. Make these for your next get-together on the patio!

Ingredients

Crust:

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup softened butter

Filling:

2 eggs

1 cup granulated sugar

1 tsp Pure Madagascar Vanilla Bean Paste

2 tbsp lemon juice

2 tsp grated lemon zest

1/2 tsp baking powder

1/4 tsp salt

Powdered sugar for sprinkling

Directions

Preheat oven to 350°F. In a medium-sized bowl, combine flour, butter and powdered sugar and mix well. Press into an ungreased 8-9" pan. Create edges up the sides of the pan about 1/2" tall. Bake for 20 mins, or until lightly brown.

Using an electric mixer, combine remaining ingredients and beat on high for approximately 3 minutes, or until light and fluffy. Pour over hot crust.

Bake for 25-30 minutes or until firm but still spongy to the touch. Cool completely, then sprinkle with powdered sugar.
